Yatai Ramen works hand in hand at home with Gilles Matignon's mill, located in Île-de-France. His work is a living testimony of unique expertise. A family heritage, he is dedicated to the processing of organic wheat grown in the region. Every morning, Gilles grinds with precision, combining tradition and respect for the environment. His passion for quality and sustainable methods, making his mill a symbol of commitment to organic farming and family values.

Home-made noodles
Our noodles, made with organic flour from the Gilles Matignon mill, are tasty and have a perfect texture. Perfect blend with our organic flour and kansui, cooked al dente, they absorb the broth richly. Combined with toppings like pork chashu and nitamago marinated eggs, they offer an authentic and comforting experience.

Nitamago egg
Nitamago eggs, made every morning, are a tasty addition to ramen. Marinated in a mixture of soy sauce, mirin, and dashi, these eggs are cooked to a creamy yolk. Their melting texture goes perfectly in our ramens.

Signature ramen
Our signature ramen is an exceptional and unique dish in France combining our passion for Japan and our French know-how. The savory broth, enriched with slices of tender wagyu, pairs perfectly with the creaminess of homemade foie gras and our homemade noodles. At YATAI RAMEN, each ramen bowl is the result of meticulous attention and a passion for authenticity. Our broth, prepared daily from carefully selected fresh poultry, is simmered for 24 hours using the traditional Japanese process. This long simmering allows the development of an exceptional wealth of flavors, thus offering an aromatic depth that enhances each ingredient for an unparalleled taste experience with each spoon.

The Ramen Kit

Cook the noodles separately in boiling water for 15 seconds, then drain them thoroughly.
